Muga and haritza. Mugaritz. Muga is frontier in Basque. Haritz means oak.

Mugaritz is considered a leader and pioneer in the international gastronomic sector for its creative flair, its courage, its unique approach and its ability to connect with worlds outside of the culinary sphere. With two Michelin stars, Mugaritz has been the only establishment considered to be among the ten best restaurants globally for 14 consecutive years according to the renowned international list of The World’s 50 Best Restaurants. 

A silent spectator of this evolution, our oak tree has been witness to our hopes and dreams and, most probably, has seen frustration and heard confessions in the 20 or more languages that coexist in our team.

Andoni Luis Aduriz

Internationally regarded as one of the most influential chefs of our time, Andoni is synonymous with vocation, knowledge and creativity. He has been leading Mugaritz, a project intended to be a creative ecosystem where cuisine is merely a pretext for experimentation, since 1998. His multidisciplinary and innovative vision of cuisine has led him to speak at forums such as Harvard University and MIT, but also to promote informative and educational projects in his homeland, at the Madrid Culinary Campus, the Basque Culinary Center and the Diálogos de Cocina congress, for example.

Our period of introspection, the time to embrace the abstract in order to recreate a new proposal every year, almost from scratch. A time to shake up the macerated lessons learned so that they do not solidify. A few months that we also dedicate to research projects, collaborations and consultancies.

6 months to share

With the coming of spring, we open our doors to share the results of our research with our guests, in the form of an experience. The rough sketches come to life and cease to be ours alone, expanding their meanings with those of our diners.

6 months to search

We are a shared commitment, a collective effort. As if we were a swarm, we move with freedom and in apparent disorder, each one of us knowing our place. Between all of us, those of yesterday and those of today, we have created an ecosystem that sustains us and encourages us to walk off the beaten track.
