XAL proposes a cuisine of influences inspired by the historic Manila Galleon Route, the first trade route that connected Asia with Europe and America.
Andoni Luis Aduriz and the Xcaret Group announced yesterday in Madrid the forthcoming opening of XAL, a new gastronomic concept developed by Andoni Luis Aduriz that will open its doors in the first quarter of this year in the exclusive boutique hotel La Casa de La Playa, in the Riviera Maya (Mexico).
XAL proposes a cuisine of influences inspired by the historic Manila Galleon Route, the first trade route that connected Asia with Europe and America. ‘At XAL we wanted to focus on the identity, culture and gastronomy of Mexico and develop a cuisine of influences where we explore three types of cuisine – Filipino, Mexican and Basque – enhancing their common elements through Mexican produce. Mexico becomes in XAL the centre and the heart between Asia and Europe’, Aduriz explained.

The story of the Manila Galleon was the greatest commercial adventure the world had ever seen and the trigger for the first globalisation of the world economy. The main architects were two Guipuzcoans: Andrés de Urdaneta, who found the return route for all Asian trade to America in 1565, and Miguel López de Legazpi, who was in charge of establishing all the trade logistics. This route changed the world of cultural relations through the crossing of goods, including culinary goods.
La Casa de la Playa
La Casa de la Playa is the first boutique hotel of Grupo Xcaret, a living sculpture in front of the sea, designed by architect David Quintana. It has 63 suites and is located in the Riviera Maya, facing a spectacular private beach and surrounded by nature.
