Mugaritz is a space for research and exploration. Driven by our curiosity, we insist on pushing the limits of gastronomy. We draw from other disciplines, aware that curiosity is the key that opens all doors. Convinced that the process is always of more interest than the goal itself.

In 2026, we will explore so-called common ground: what we believe tastes good, what we understand as luxury, what feels familiar or comfortable…

Ideas we assume are shared—until we take a closer look.

From May 1 to October 25, we will share with our guests the gastronomic proposal we have been developing over six months. An experience that will exist only for that time, before disappearing.

Each year, a new path is born—and fades away.
